Description
Lime-marinated chicken finished with a fresh avocado, tomato, and jalapeno salsa.
Ingredients
- 4 boneless skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 tablespoon lime zest
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and black pepper
- 2 avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 jalapeno, finely chopped
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice for the salsa
- 1 tablespoon olive oil for the salsa
Instructions
- Whisk together the olive oil, lime juice, lime zest, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
- Coat the chicken in the marinade and refrigerate at least 30 minutes and up to 4 hours.
- Preheat the oven to 400 degrees F and lightly grease a baking dish.
- Bake the chicken 20 to 25 minutes until cooked through.
- Meanwhile combine the avocados, tomatoes, red onion, jalapeno, and cilantro.
- Whisk together the lime juice, olive oil, salt, and pepper and toss with the avocado mixture.
- Let the chicken rest briefly, then serve with the avocado salsa spooned over the top.
