Ingredients
- Egg muffin base of whisked eggs with salt and pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 3 to 4 jalapeno peppers, deseeded and chopped, plus slices for topping if desired
- 1/3 cup softened cream cheese
- 1/2 cup grated cheddar cheese
- 1/3 cup cooked crumbled bacon
Instructions
- Preheat the oven to 400 degrees F and grease or line a 12-cup muffin pan.
- Whisk together the eggs, salt, and pepper.
- Whisk in the garlic powder, onion powder, and cream cheese until combined.
- Stir in the cheddar, chopped jalapeno, and bacon.
- Divide the mixture evenly among the muffin cups, filling each about two-thirds full.
- Top each with a jalapeno slice if desired.
- Bake 12 to 15 minutes, until set.
