Description
Simple limey rice finished with chopped cilantro.
Ingredients
- 1 tablespoon butter
- Juice of 2 limes, divided
- 1/2 teaspoon kosher salt
- 1 cup basmati rice
- 2 cups water
- 1 tablespoon chopped cilantro
Instructions
- Melt the butter in a saucepan over low heat.
- Add the juice of 1 lime, salt, and rice, and stir for 1 minute to coat.
- Add the water and bring to a boil.
- Cover, reduce the heat, and simmer until the rice is tender, 22 to 25 minutes.
- Fold in the cilantro and finish with more lime juice before serving.
